This stainless steel pump is designed to dispense from a 1/3-size steam table pan, 6" (15 cm) deep. The pump dispenses a 1 oz (30 mL) serving per stroke with the option to reduce the portion size in 1/8 oz (3.7 mL) increments, using the supplied gauging collars. When you place your order, be sure to request a colored knob engraved with your contents for a clean presentation. A black knob is standard. Steam table pan shown is sold separately.

The Tall discharge tube is designed to work with the newer refrigeration requirement for the more recent NSF Standard 7 Listing. The reason for the change is that a flow of cold air is needed over the top of the food in order to keep the top layer below 41º F (5º C). This extra depth actually recesses the top of the pan 3" (7.6 cm) below the top lip of the refrigeration.
